Basically, if you're already running a few special attacks, psyshock lets you be more unpredictable, whereas psychic is better if you're running, say, a calm mind/baton pass/heal bell/attack espeon set. It is because psychic users are (usually) special attackers. Stab is irrelevant because both moves are psychic type so if you get stab for one you get stab for the other.

I'm planning on having psychic/psyshock, grass knot, shadow ball, and maybe focus blast. Moonblast used to be way better than psychic, but psychic after its buffs pairs really well with psyshock, especially since the special defense debuff helps you shred everything. The two are very different, comparing the two in terms of overal would be a matter of opinion, because both things have their pro and cons in equally states and is quite oposite to one. But i can't decide between psychic and psyshock for my stab move.

Psychic is better against defensively bulky things like amoonguss and venusaur. This means that they can do very little damage to pokemon like blissey, which has massive health and special defence. I would go with psyshock, personally, just so you don't get walled by pokemon like blissey.

Most Of What Alakazam Is Good Against Have High Physical Defense But On The Other Hand, The Few Things That Don't Would Benefit From Having Someone Like Alakazam Who Is Fast.

The quality of life change where your camera zooms out during psyshock is also really nice. Psyshock helps get around special walls, but psychic does more damage on the special defense side. Sb is better in the meta.
